Ethnic Culinary Adventures with Linda Stavely, Chef

Each class will afford you hands-on opportunities to cook, to observe a skill, and of course, to dine.  All classes will meet from 6:30-9:00 PM at Linda's home at 18 Summer Street in Keene.  Parking is available on Summer Street or court Street - no meters after 5:00 PM.  Parking on summer St. (from School St. to Court St.) is on the right-hand side, as summer is a one-way street.  A $13/person ingredient fee is payable to the instructor the night of class.  Limit in each class is 10 participants.


Middle Eastern Cuisine

Our evening in the Middle East will begin with an appetizer of Israeli Falafel, followed by Chicken Borek (chicken-filled pastry from Turkey) and Kibbeh Bil Sanieh a lamb dish prepared with bulgur wheat, herbs and spices. The vegetable side will be leek patties from Israel. The dessert is a sweet Syrian Sesame Baklava.  Limit:  10

French Dinner (THIS CLASS IS FULL - see new class below)

Appetizers include cheese gougères and ratatouille with French bread, followed by a summer tomato bouillabaisse with basil rouille.  The first course is spinach, leek and bacon quiche with a Nicoise salad made with grilled tuna and potatoes. Enjoy two desserts – Raspberry-Hazelnut Galette, a pastry rich with raspberry hazelnuts, and a fruit Clafouti.    Limit:  10

Bacalao with Allioli (bite sized fish cakes) open the evening.  Ensalada de aguacates, an avocado orange and almond salad, sets the stage for the entrees. Paella Valenciana is a grand combination of chicken, pork, shellfish, sausage, rice and vegetables, and the second entree is lamb with red peppers and Rioja served with potato. Dessert is a baked caramel custard called Spanish Flan.      Limit:  10

Tiropitakia Cheese Triangles feature phyllo with Greek Cheese, and Garithes Me Feta are baked prawns with feta. Next we have Papoutsakia (little shoes) an eggplant dish, and Arni Souvlakia (grilled lamb on a skewer) with Salata Exohiko (Country Style Salad) . Floyeres is a fast and delicious nut and phyllo dessert.  Limit:  10

Enjoy a Thai shellfish soup which includes shrimp, scallops, mushrooms, rice with lemon grass, and other herbs.  Next is Chicken Noodle Salad from China, a fun and flavor-filled dish. Sukiyaki of Japan is made of steak and vegetables with Japanese seasonings, complemented by Thailand-stir-fried cellophane noodles with vegetables and pork. Korean Won Tons filled with beef and vegetables will also be served, with sour and spicy sauces.  Fresh fruit and ginger ice cream top the menu.  Limit:  10

Zuppa di Cozze, a mussel soup with onion, celery, garlic, wine, plum tomatoes, and herbs, and served with crusty bread, start the evening. Calzone (deep fried prosciutto and cheese turnovers) with dipping sauces are followed by Fagioli Toscanelli Con Tonno, a white bean and tuna salad and Ragu Bolognese (North Italian Meat Sauce with freshly made pasta). The dessert is Cassata alla Siciliana from Sicily, a cake layered with cheese and then glossed with a chocolate espresso coating.  Limit:  10

Holiday Brunch “Make A-Head” Recipes (THIS CLASS IS FULL)

Make a delectable caramel-like Dulce de Leche French Toast, as well as a Banana French Toast Topped with mixed berries.  Guests will also enjoy your veggie-packed Strata, Bacon and Egg Lasagna, and yummy holiday bread creations.  Limit: 10

Join Shree Chalumuri of Shree’s Kitchen and learn to create authentic Indian dishes.  You’ll gain an appreciation of how spices not only enhance a single dish, but also are used to complement the various dishes on the menu.  Bring containers for take home.

You will make Malai Kofta Curry (spiced potato balls slowly cooked in aromatic creamy sauce) and Jeera Chicken (chicken marinated with spices, lemon and stir fried with garlic, curry leaves and cumin).  Limit:  12
