Ethnic Culinary Adventures with Linda Stavely, Chef

Each class will afford you hands-on opportunities to cook, to observe a skill, and of course, to dine.  All classes will meet from 6:30-9:00 PM at Linda's home at 18 Summer Street in Keene.  Parking is available on Summer Street or court Street - no meters after 5:00 PM.  Parking on summer St. (from School St. to Court St.) is on the right-hand side, as summer is a one-way street.  A $15/person ingredient fee is payable to the instructor the night of class.  Limit in each class is 10 participants.

Vietnamese Snacks & Starters

You will thoroughly appreciate Baked Shrimp Toasts, Grilled Lemongrass Beef Skewers, Beef and Jicama hand Rolls, Corn and Coconut Fritters, Fried Wontons, and Savory Meat Pastries.  Delicious!

Fall Evening in Italy

Dine on a Porcini Mushroom and Prosciutto Bruschetta, followed by a flavorful autumn Minestrone with garlic bread.  Deep-fried and stuffed mushrooms are next, paired with Filetti di Sogliola alle Bietole, a simple fillet of fish prepared with an excellent olive oil, butter, pine nuts and beet greens.  Penne with sausages, breadcrumbs, garlic and chili are memorable; red wine vinegar and olive oil coat the penne.  Walnut Tart completes your evening.  Limit:  10

Evening in France 

Creme Dubarry is a rich blend of cauliflower, leeks, and onions in chicken stock combined with heavy cream and herbs, and the pleasurable opening to your evening.  Next you'll enjoy Seafood in Pastry Shell: the filling is made of scallops, fish, mussels, mushrooms, tomatoes, cream and butter.  A Steak au Poivre (pepper steak) is then served with Crepes mere Blanc (potato pancakes), salad and cheeses.  The finale?  Buche de Noel, or Christmas Yule Log.

Cuisine of Portugal

Come enjoy a hearty Portuguese Stone Soup filled with vegetables and beans, a Portuguese legend.  Next is Rojoes Cominho, a braised pork dish with cumin, coriander and lemon, served with shrimp risotto.  Portuguese fried potatoes, salad and cheese round out this menu, and all is topped off with Bolo Podre Rico, a spice cake made with almonds and raisins.
