Wild Yeast Workshop  (THIS CLASS IS NOW FULL)

Learn the ancient practice of sourdough (levain in French) from Sam Temple of Fire Dog Breads. You will learn a simple levain recipe suited for home kitchens; explore the impacts of time, temperature, and different grains on fermentation; and discuss the history and culture of wild yeast breads. Participants will get a chance to scale ingredients, mix and shape doughs, and taste some fresh-baked bread!  Everyone will leave with a small container of sourdough, a banneton (a small basket for proofing bread), and a shaped dough they can bake at home the following day. Aprons, notebooks and comfortable shoes optional.

Ethnic Culinary Adventures with Linda Stavely, Chef

Each class will afford you hands-on opportunities to cook, to observe a skill, and of course, to dine.  All classes will meet from 6:30-9:00 PM at Linda's home at 18 Summer Street in Keene.  Parking is available on Summer Street or court Street - no meters after 5:00 PM.  Parking on summer St. (from School St. to Court St.) is on the right-hand side, as summer is a one-way street.  A $13/person ingredient fee is payable to the instructor the night of class.  Limit in each class is 10 participants.

A delectable Lobster Bisque starts this menu, followed by mushrooms in puff pastry and an entree of Pork Scallopini with Cream.  Side dishes are Calvados (apple brandy) and Apples and Timbales d’Epinards, a spinach mold.  The sweet ending is Galette au citron, an open and luscious lemon tart.

Umbria Italy (THIS CLASS IS NOW FULL)

Castelluccio Lentil soup is simple and savory, combining lentils, vegetables, bread and cheese into a filling, wonderful soup. La Fogata del Panciolle is a dish made of sausage and greens and is our first course.  Next we have a freshly made pasta with asparagus, herbs and cherry tomatoes. The entree is Scaloppine di Maiale con Capperi e Vino Rosso, or pork in a caper and red wine glaze. Dessert is a heavenly creation of the Capuchin Nuns, a fruit and nut-filled pastry.

Portugal

A pumpkin soup begins our evening in Portugal, followed by lamb stew flavored with paprika, cayenne, lemon, mint, parsley and red wine.  The stew is served with carrots and husky Portuguese bread.  Our second dish is sauteed fresh tuna steaks served with tomato and cucumber and Salt Cod Count of Guarda-salt cod with potato, onion, garlic, cream and cheese. Dessert is a decadent Mousse de Chocolat.

Trip to Moosewood Collective (THIS CLASS IS FULL)

The newly published Moosewood Restaurant Table cookbook is featured this evening. Our starter is Cauliflower Quinoa Bites followed by simply delicious Thai Corn Chowder.  A mushroom/barley salad and Pasta with Avocado Pesto are also served.  Dessert is an Apricot Frangipane Tart with whipped cream.

Dumplings followed by Hot Sour Soup begin our banquet. Then we will have Mu Shu Rou, a pork and vegetable stir fried dish, along with Chinese Pancakes. Buddha's Delight is next - a vegetarian dish of fresh and dried vegetables served with noodles. Dessert is Eight Treasures, a steamed rice and fruit creation.

Spanish Table

The tapas to start the evening are Chorizo a la Sidra (Sausage and Apples in Hard Cider Sauce) and Bunuelos de Chorizo (Chorizo Puffs). Next is Arroz Con Acelgas, a rice, bean and greens soup which is a specialty of Valencia.  We'll also enjoy crabmeat dressed with a saffron perfumed vinaigrette and a Valencian Paella, a combination of meats, vegetables and saffron rice. Tart de Naranja (Orange Almond Cake) is for dessert.  This is a delightful, gluten-free cake topped with orange syrup.
